This refreshing, festive drink is popular in homes and also to sip while lingering with
friends on café terraces. The almond flavor is delicate, so be careful when adding the
orange flower water.
1⁄2 cup/60 g ground almonds
6 Tbsp/75 g superfine sugar
3 cups/720 ml milk
16 drops or so orange flower water
In a small saucepan, heat 1 cup/240 ml water
until hot. In a mixing bowl, put the almonds and
sugar and cover with the hot water. Stir and let
sit for 5 minutes. Add the milk and let sit for
another 5 minutes, stirring from time to time.
Strain through a very fine sieve, a tea strainer,
or cheesecloth into a pitcher. Press or squeeze all
the liquid from the almonds; discard the solids.
Refrigerate until well chilled.
Add the orange flower water, stir, and divide
among tall glasses. Serve very cold.
